The production of environmentally friendly (organic) products is becoming an integral part of the socio-economic system of the regions, and the issue of the development of this production is included in the global problem of both sustainable food security of the population and the problem of human survival, preservation of its gene pool. Since the main carrier of information about consumer preferences for food is the population and trade organizations, the article presents the results of a sociological survey that allows a comprehensive assessment of the demand for organic products. The purpose of the study is to identify the current level of awareness, development trends and directions of potential growth of the organic products market of the Penza region. The study revealed an extremely low degree of awareness of sellers and buyers regarding the understanding of what constitutes «organic products». The preferred channels for the purchase/sale of organic products were identified and behavioral motives for the demand for «organic products» were determined.
